Mac and Cheese
Ingredients
- 7 Tablespoons butter
- 4 Tablespoons flour
- 2 cups half and half
- 1 teaspoon salt
- 1/4 teaspoon ground white pepper
- 1/4 teaspoon Emeril's Red Hot Sauce
- 4 ounces grated cheddar cheese
- 4 ounces grated gruyere cheese
- 1 pound elbow macaroni
- 1/2 teaspoon creole seasoning
Directions
In a heavy, medium saucepan melt 4 tablespoons of the butter over low heat. Add the flour and stir to combine. Cook, stirring constantly, for 3 minutes. Increase the heat to medium and whisk in the half and half little by little. Cook until thickened, about 4 to 5 minutes, stirring frequently. Remove from the heat, season with the salt, pepper, creole seasoning, and cheeses. Stir until cheese is melted and sauce is smooth. Add to cooked pasta and serve immediately.
